- 8 oz wide Lo Mein noodles
- 1 tablespoon peanut oil
- 1 pound ground pork
- 1/4 cup + 2 tablespoons sliced green onions
- 1/2 cup low-sodium chicken broth
- 3 tablespoons mirin
- 2 tablespoons dark soy sauce
- 1 tablespoon minced garlic
- 2 teaspoons grated ginger
- 1 teaspoon sesame oil
- 1/2 teaspoon sriracha
- 4 cups coleslaw mix
Instructions
- Cook the Noodles: Boil water in a large pot, add Lo Mein noodles, cook as per package instructions, drain and rinse under cold water.
- Brown the Pork: Heat peanut oil in a large skillet, add ground pork and 1/4 cup green onions, stir and cook for 5-7 minutes until browned.
- Prepare the Sauce: Whisk together chicken broth, mirin, dark soy sauce, minced garlic, grated ginger, sesame oil, and sriracha in a bowl.
- Combine Ingredients: Add cooked noodles and coleslaw mix to the skillet with pork, pour sauce over everything.
- Toss and Coat: Toss to coat all ingredients with sauce, cook for 2-3 minutes until coleslaw wilts slightly.
- Garnish and Serve: Remove from heat, top with remaining green onions and additional sriracha if desired, serve hot.
