Description

Delicious and healthy pumpkin spice granola bars perfect for a fall snack.


Ingredients

Scale
  • 2 cups rolled oats
  • 1 cup pumpkin puree
  • 1/2 cup honey or maple syrup
  • 1/2 cup almond butter
  • 1 teaspoon pumpkin spice
  • 1/2 teaspoon vanilla extract
  • 1/4 cup chopped nuts (optional)
  • 1/4 cup dried cranberries (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the rolled oats, pumpkin puree, honey or maple syrup, almond butter, pumpkin spice, and vanilla extract until well combined.
  3. If using, fold in the chopped nuts and dried cranberries.
  4. Spread the mixture evenly in a greased baking dish.
  5. Bake for 20-25 minutes or until golden brown.
  6. Allow to cool completely before cutting into bars.

Notes

  • Store in an airtight container for up to a week.
  • Feel free to customize with your favorite nuts or dried fruits.
  • For a crunchier texture, bake a little longer.
