- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/2 cup pumpkin puree
- 1/4 cup brewed coffee
- 1/4 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
- In a large bowl, mix together the flour, sugar, brown sugar, baking powder, baking soda, pumpkin pie spice, and salt.
- In another bowl, whisk together the pumpkin puree, brewed coffee, vegetable oil, eggs, and vanilla extract.
- Combine the wet ingredients with the dry ingredients and mix until just combined.
- Fill the cupcake liners about 2/3 full with the batter.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Let the cupcakes cool completely before frosting.
Notes
- For a stronger coffee flavor, use espresso instead of brewed coffee.
- These cupcakes can be stored in an airtight container for up to 3 days.
- Top with cream cheese frosting for an extra treat!
