Description

Deliciously moist cupcakes infused with the flavors of pumpkin spice and coffee, topped with a creamy frosting.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup pumpkin puree
  • 1/4 cup brewed coffee
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, mix together the flour, sugar, brown sugar, baking powder, baking soda, pumpkin pie spice, and salt.
  3. In another bowl, whisk together the pumpkin puree, brewed coffee, vegetable oil, eggs, and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients and mix until just combined.
  5. Fill the cupcake liners about 2/3 full with the batter.
  6. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  7. Let the cupcakes cool completely before frosting.

Notes

  • For a stronger coffee flavor, use espresso instead of brewed coffee.
  • These cupcakes can be stored in an airtight container for up to 3 days.
  • Top with cream cheese frosting for an extra treat!
