Description

Ingredients

  • 1 cup cream cheese, softened
  • 1/2 cup sugar
  • 1/2 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1/4 teaspoon salt
  • 1 cup graham cracker crumbs
  • 1/4 cup butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the cream cheese and sugar until smooth.
  3. Add the pumpkin puree, vanilla extract, cinnamon, nutmeg, ginger, and salt. Mix until well combined.
  4. In another bowl, mix the graham cracker crumbs with melted butter.
  5. Press the graham cracker mixture into the bottom of a lined muffin tin.
  6. Pour the pumpkin cheesecake mixture over the crust.
  7. Swirl the top with a knife for a marbled effect.
  8. Bake for 20-25 minutes or until set.
  9. Let cool and refrigerate for at least 2 hours before serving.
