Ingredients

  • 1 cup brown sugar
  • 2 large eggs
  • 1/2 cup molasses
  • 1/4 cup milk
  • Powdered sugar for dusting
  • Frosting of choice (cream cheese or whipped cream)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a jelly roll pan.
  2. In a bowl, mix together the flour, baking powder, ginger, cinnamon, nutmeg, and salt.
  3. In another bowl, cream the butter and brown sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the molasses and milk until combined.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Spread the batter evenly in the prepared pan and bake for 15-20 minutes.
  8. Once baked, let it cool for a few minutes, then roll it up in a clean kitchen towel and let it cool completely.
  9. Unroll the cake, spread frosting on top, and roll it back up.
  10. Dust with powdered sugar before serving.
