- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar
- 2 large eggs
- 1/2 cup molasses
- 1/4 cup milk
- Powdered sugar for dusting
- Frosting of choice (cream cheese or whipped cream)
Instructions
- Preheat the oven to 350°F (175°C) and grease a jelly roll pan.
- In a bowl, mix together the flour, baking powder, ginger, cinnamon, nutmeg, and salt.
- In another bowl, cream the butter and brown sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the molasses and milk until combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Spread the batter evenly in the prepared pan and bake for 15-20 minutes.
- Once baked, let it cool for a few minutes, then roll it up in a clean kitchen towel and let it cool completely.
- Unroll the cake, spread frosting on top, and roll it back up.
- Dust with powdered sugar before serving.
Notes
- Make sure to roll the cake while it’s still warm to prevent cracking.
- You can add nuts or chocolate chips to the batter for extra flavor.
- Store leftovers in an airtight container in the refrigerator.
