Instructions
- Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
- Sift together the almond flour, powdered sugar, and cocoa powder into a mixing bowl.
- Beat the egg whites until frothy, then gradually add the granulated sugar and whisk until stiff peaks form.
- Fold the dry ingredients into the egg whites gently, then add red food coloring and vanilla extract.
- Transfer the batter to a piping bag and pipe circles onto the prepared baking sheet.
- Let the piped macarons sit for about 30 minutes to form a skin.
- Bake for 15-20 minutes until they easily lift off the parchment.
- Beat the butter and cream cheese until smooth, then mix in the powdered sugar and vanilla extract for the filling.
- Pipe the cream cheese filling onto one macaron shell and sandwich with another shell.
- Allow the macarons to rest for at least an hour before serving.
