Description

Delightful bite-sized Reuben Balls filled with corned beef, Swiss cheese, and sauerkraut, served with a spicy Thousand Island dipping sauce.


Ingredients

Scale
  • 1 cup corned beef, finely chopped
  • 1 cup sauerkraut, drained and chopped
  • 1 cup mashed potatoes
  • 1 cup Swiss cheese, shredded
  • 1/2 cup breadcrumbs
  • 1 egg, beaten
  • Salt and pepper to taste
  • Oil for frying

For the Spicy Thousand Island Dipping Sauce:

  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon horseradish
  • 1 teaspoon hot sauce

Instructions

  1. In a large bowl, combine corned beef, sauerkraut, mashed potatoes, Swiss cheese, and breadcrumbs. Drizzle in the beaten egg and season with salt and pepper.
  2. Form the mixture into small balls, about the size of a golf ball.
  3. Heat oil in a frying pan over medium heat. Fry the balls in batches until golden brown, about 4-5 minutes on each side.
  4. For the dipping sauce, mix together mayonnaise, ketchup, horseradish, and hot sauce in a small bowl.
  5. Remove the fried balls with a slotted spoon and let them rest on a paper towel. Serve with the dipping sauce.

Notes

Make-ahead tips: Prepare the filling ahead of time and store in the refrigerator for up to 24 hours before frying. You can also bake these at 400°F (200°C) for about 20 minutes.
