Description
Delightful bite-sized Reuben Balls filled with corned beef, Swiss cheese, and sauerkraut, served with a spicy Thousand Island dipping sauce.
Ingredients

- 1 cup corned beef, finely chopped
- 1 cup sauerkraut, drained and chopped
- 1 cup mashed potatoes
- 1 cup Swiss cheese, shredded
- 1/2 cup breadcrumbs
- 1 egg, beaten
- Salt and pepper to taste
- Oil for frying
For the Spicy Thousand Island Dipping Sauce:
- 1/2 cup mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon horseradish
- 1 teaspoon hot sauce
Instructions
- In a large bowl, combine corned beef, sauerkraut, mashed potatoes, Swiss cheese, and breadcrumbs. Drizzle in the beaten egg and season with salt and pepper.
- Form the mixture into small balls, about the size of a golf ball.
- Heat oil in a frying pan over medium heat. Fry the balls in batches until golden brown, about 4-5 minutes on each side.
- For the dipping sauce, mix together mayonnaise, ketchup, horseradish, and hot sauce in a small bowl.
- Remove the fried balls with a slotted spoon and let them rest on a paper towel. Serve with the dipping sauce.
Notes
Make-ahead tips: Prepare the filling ahead of time and store in the refrigerator for up to 24 hours before frying. You can also bake these at 400°F (200°C) for about 20 minutes.
