Description

A delicious and sweet side dish featuring roasted acorn squash glazed with brown sugar, perfect for fall gatherings.


Ingredients

Scale
  • 2 acorn squashes
  • 4 tablespoons brown sugar
  • 2 tablespoons olive oil
  • 1 teaspoon cinnamon
  • Salt to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the acorn squashes in half and scoop out the seeds.
  3. Brush the insides with olive oil and sprinkle with salt.
  4. Place the squashes cut side up on a baking sheet.
  5. In a small bowl, mix brown sugar and cinnamon.
  6. Sprinkle the brown sugar mixture evenly over the squash halves.
  7. Bake in the preheated oven for 30-40 minutes, or until tender.
  8. Serve warm and enjoy!

  • For a richer flavor, add a pinch of nutmeg.
