Ingredients

- 1 can (15 oz) white beans, drained and rinsed
- 1 head of garlic
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- Fresh herbs for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the top off the head of garlic, drizzle with olive oil, and wrap in foil.
- Roast the garlic in the oven for about 30-35 minutes until soft.
- In a food processor, combine the roasted garlic, white beans, lemon juice, salt, black pepper, and cayenne pepper.
- Blend until smooth, adding more olive oil if needed for creaminess.
- Taste and adjust seasoning as necessary.
- Transfer to a serving bowl and garnish with fresh herbs if desired.
- Serve with pita chips, vegetables, or crackers.
Notes
- For a smokier flavor, add smoked paprika.
- This dip can be made ahead of time and stored in the refrigerator for up to 3 days.
