  • 2 tablespoons olive oil

  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the top off the head of garlic, drizzle with olive oil, and wrap in foil.
  3. Roast the garlic in the oven for about 30-35 minutes until soft.
  4. In a food processor, combine the roasted garlic, white beans, lemon juice, salt, black pepper, and cayenne pepper.
  5. Blend until smooth, adding more olive oil if needed for creaminess.
  6. Taste and adjust seasoning as necessary.
  7. Transfer to a serving bowl and garnish with fresh herbs if desired.
  8. Serve with pita chips, vegetables, or crackers.

Notes

  • For a smokier flavor, add smoked paprika.
