- 2 medium summer squashes, sliced
- 2 tablespoons olive oil
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the sliced summer squash with olive oil, garlic powder, oregano, salt, and pepper.
- Spread the squash evenly on a baking sheet.
- Roast in the preheated oven for 20-25 minutes, or until tender and lightly browned.
- Remove from the oven and sprinkle with grated Parmesan cheese.
- Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
- Serve warm as a side dish or a light main course.

- For a more intense flavor, add fresh herbs like basil or thyme.
