Description

A delicious and healthy dish featuring roasted summer squash topped with Parmesan cheese for added flavor.


Ingredients

Scale
  • 2 medium summer squashes, sliced
  • 2 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the sliced summer squash with olive oil, garlic powder, oregano, salt, and pepper.
  3. Spread the squash evenly on a baking sheet.
  4. Roast in the preheated oven for 20-25 minutes, or until tender and lightly browned.
  5. Remove from the oven and sprinkle with grated Parmesan cheese.
  6. Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
  7. Serve warm as a side dish or a light main course.
