Ingredients

- 2 cups of mixed vegetables (bell peppers, zucchini, carrots)
- 2 tablespoons of olive oil
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1/4 cup of tahini
- 2 tablespoons of lemon juice
- 1 clove of garlic, minced
- Water to thin the sauce
Instructions
- Preheat the oven to 400°F (200°C).
- Chop the mixed vegetables into bite-sized pieces.
- In a bowl, toss the vegetables with olive oil, salt, and pepper.
- Spread the vegetables on a baking sheet and roast for 20-25 minutes until tender.
- In a separate bowl, whisk together tahini, lemon juice, minced garlic, and enough water to reach desired consistency.
- Once the vegetables are roasted, remove them from the oven and let them cool slightly.
- Serve the roasted veggies in a bowl and drizzle with tahini sauce.
Notes
- Feel free to use any seasonal vegetables you have on hand.
- Adjust the tahini sauce thickness by adding more or less water.
- This dish can be served warm or cold.
