Description

A delicious and nutritious roasted veggie bowl topped with creamy tahini sauce, perfect for a healthy meal.


Ingredients

  • 2 cups of mixed vegetables (bell peppers, zucchini, carrots)
  • 2 tablespoons of olive oil
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/4 cup of tahini
  • 2 tablespoons of lemon juice
  • 1 clove of garlic, minced
  • Water to thin the sauce

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Chop the mixed vegetables into bite-sized pieces.
  3. In a bowl, toss the vegetables with olive oil, salt, and pepper.
  4. Spread the vegetables on a baking sheet and roast for 20-25 minutes until tender.
  5. In a separate bowl, whisk together tahini, lemon juice, minced garlic, and enough water to reach desired consistency.
  6. Once the vegetables are roasted, remove them from the oven and let them cool slightly.
  7. Serve the roasted veggies in a bowl and drizzle with tahini sauce.
