Ingredients

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine sliced zucchini, olive oil, minced garlic, salt, and pepper.
  3. Toss until the zucchini is well coated.
  4. Spread the zucchini mixture in a single layer on a baking sheet.
  5. Roast in the preheated oven for 20-25 minutes, or until tender and slightly golden.

  7. Return to the oven for an additional 5 minutes, until the cheese is melted.
  8. Garnish with fresh parsley before serving.
