Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine sliced zucchini, olive oil, minced garlic, salt, and pepper.
- Toss until the zucchini is well coated.
- Spread the zucchini mixture in a single layer on a baking sheet.
- Roast in the preheated oven for 20-25 minutes, or until tender and slightly golden.
- Remove from the oven and sprinkle with grated Parmesan cheese.
- Return to the oven for an additional 5 minutes, until the cheese is melted.
- Garnish with fresh parsley before serving.
