Description

A tropical delight, these crispy fried pineapple rings soaked in dark and coconut rum are served with a creamy dip for a perfect dessert experience.


Ingredients

  • 8 pineapple rings
  • 1 cup dark rum
  • 1 cup coconut rum
  • 1 1/2 cups all-purpose flour
  • 1 (10-oz.) bag sweetened coconut flakes
  • 2 large eggs
  • 1/2 cup coconut milk
  • Vegetable oil for frying
  • 4 oz. cream cheese, softened
  • 1/2 cup powdered sugar

Instructions

  1. Soak the pineapple rings in a medium bowl with dark and coconut rum for at least 1 hour. Pat dry after soaking.
  2. Prep your breading station: one bowl with flour, another with whisked eggs and coconut milk, and the last with coconut flakes.
  3. Dip each pineapple ring in flour, then in the egg mixture, and finally coat with coconut flakes.
  4. Heat vegetable oil in a deep pot to 350°F (175°C).
  5. Fry the rings in batches for 1 minute on each side until golden brown.
  6. Mix softened cream cheese and powdered sugar in a bowl, then gradually stir in reserved rum for the dipping sauce.

Notes

For a healthier option, consider using an air fryer. Soaking the pineapple rings overnight intensifies the flavor.
