A tropical delight, these crispy fried pineapple rings soaked in dark and coconut rum are served with a creamy dip for a perfect dessert experience.

- 8 pineapple rings
- 1 cup dark rum
- 1 cup coconut rum
- 1 1/2 cups all-purpose flour
- 1 (10-oz.) bag sweetened coconut flakes
- 2 large eggs
- 1/2 cup coconut milk
- Vegetable oil for frying
- 4 oz. cream cheese, softened
- 1/2 cup powdered sugar
Instructions
- Soak the pineapple rings in a medium bowl with dark and coconut rum for at least 1 hour. Pat dry after soaking.
- Prep your breading station: one bowl with flour, another with whisked eggs and coconut milk, and the last with coconut flakes.
- Dip each pineapple ring in flour, then in the egg mixture, and finally coat with coconut flakes.
- Heat vegetable oil in a deep pot to 350°F (175°C).
- Fry the rings in batches for 1 minute on each side until golden brown.
- Mix softened cream cheese and powdered sugar in a bowl, then gradually stir in reserved rum for the dipping sauce.
Notes
For a healthier option, consider using an air fryer. Soaking the pineapple rings overnight intensifies the flavor.
