Description

A warm and hearty dish featuring acorn squash stuffed with a savory mixture of sausage and apples, perfect for a cozy meal.


Ingredients

Scale
  • 2 acorn squashes
  • 1 pound sausage (Italian or breakfast)
  • 1 apple, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • 1 teaspoon sage
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 1/2 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the acorn squashes in half and scoop out the seeds.
  3. In a skillet, cook the sausage over medium heat until browned.
  4. Add the onion and garlic to the skillet and sauté until softened.
  5. Stir in the diced apple, breadcrumbs, sage, thyme, salt, and pepper.
  6. Fill each acorn squash half with the sausage and apple mixture.
  7. If desired, sprinkle cheese on top of the stuffed squashes.
  8. Place the stuffed squashes in a baking dish and add a little water to the bottom.
  9. Bake for 30-40 minutes, or until the squash is tender.

Notes

  • Feel free to use any type of sausage you prefer.
  • For a vegetarian option, substitute sausage with a plant-based alternative.
  • Leftovers can be stored in the refrigerator for up to 3 days.
