- 2 acorn squashes
- 1 pound sausage (Italian or breakfast)
- 1 apple, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup breadcrumbs
- 1 teaspoon sage
- 1 teaspoon thyme
- Salt and pepper to taste
- 1/2 cup shredded cheese (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the acorn squashes in half and scoop out the seeds.
- In a skillet, cook the sausage over medium heat until browned.
- Add the onion and garlic to the skillet and sauté until softened.
- Stir in the diced apple, breadcrumbs, sage, thyme, salt, and pepper.
- Fill each acorn squash half with the sausage and apple mixture.
- If desired, sprinkle cheese on top of the stuffed squashes.
- Place the stuffed squashes in a baking dish and add a little water to the bottom.
- Bake for 30-40 minutes, or until the squash is tender.
Notes
- Feel free to use any type of sausage you prefer.
- For a vegetarian option, substitute sausage with a plant-based alternative.
- Leftovers can be stored in the refrigerator for up to 3 days.
