Description

Indulge in the creamy comfort of scalloped potatoes layered with crispy bacon and sweet caramelized onions, topped with melted cheese.


Ingredients

Scale
  • 2 pounds of potatoes (Russet or Yukon Gold)
  • 4 strips of bacon
  • 1 large onion
  • 2 cups heavy cream
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the chopped bacon in a skillet over medium heat until crispy.
  3. Remove the bacon and leave the grease in the skillet.
  4. Add the sliced onions to the skillet and caramelize them until golden brown.
  5. Add minced garlic for the last minute.
  6. Combine heavy cream, salt, and pepper in a large mixing bowl.
  7. Layer half of the sliced potatoes in a greased baking dish.
  8. Pour half of the cream mixture over the potatoes.
  9. Add half of the bacon, caramelized onions, and half of the cheeses.
  10. Repeat layering with remaining ingredients.
  11. Cover with aluminum foil and bake for 45 minutes.
  12. Remove the foil and bake for an additional 15-20 minutes, until golden and bubbly.
  13. Let it cool for a few minutes before serving and garnish with parsley.

Notes

Consider using turkey bacon for a lighter version. You can also add sautéed mushrooms or spinach for extra flavor.
