- 2 pounds of potatoes (Russet or Yukon Gold)
- 4 strips of bacon
- 1 large onion
- 2 cups heavy cream
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 2 cloves garlic
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the chopped bacon in a skillet over medium heat until crispy.
- Remove the bacon and leave the grease in the skillet.
- Add the sliced onions to the skillet and caramelize them until golden brown.
- Add minced garlic for the last minute.
- Combine heavy cream, salt, and pepper in a large mixing bowl.
- Layer half of the sliced potatoes in a greased baking dish.
- Pour half of the cream mixture over the potatoes.
- Add half of the bacon, caramelized onions, and half of the cheeses.
- Repeat layering with remaining ingredients.
- Cover with aluminum foil and bake for 45 minutes.
- Remove the foil and bake for an additional 15-20 minutes, until golden and bubbly.
- Let it cool for a few minutes before serving and garnish with parsley.
Notes
Consider using turkey bacon for a lighter version. You can also add sautéed mushrooms or spinach for extra flavor.
