- 4 large eggs
- 1 can (14 oz) diced tomatoes
- 1 medium onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp paprika
- Salt and pepper to taste
- 4 slices of bread (your choice)
- Fresh parsley, for garnish
Instructions
- In a skillet, heat some oil over medium heat and sauté the onion and bell pepper until soft.
- Add the garlic, cumin, paprika, salt, and pepper, and cook for another minute.
- Stir in the diced tomatoes and let the mixture simmer for about 10 minutes.
- Make small wells in the sauce and crack the eggs into each well.
- Cover the skillet and cook until the eggs are set to your liking.
- Meanwhile, toast the bread slices.
- Serve the shakshouka over the toasted bread and garnish with fresh parsley.
Notes
- For a spicier version, add chili flakes or fresh chili peppers.
- Feel free to add other vegetables like spinach or zucchini.
