Description

A refreshing bowl featuring succulent shrimp, creamy avocado, and vibrant mango salsa, topped with a zesty lime-chili sauce.

Ingredients

Scale
  • 12 oz shrimp, peeled and deveined
  • 2 avocados, diced
  • 1 mango, diced
  • 1 small red onion, diced
  • 1 handful cilantro, chopped
  • 1 small jalapeño, diced
  • 2 limes, juiced
  • 1 tsp chili powder
  • 2 tbsp olive oil
  • 1 tsp honey
  • 1 tsp salt
  • 0.5 tsp black pepper

Instructions

  1. Marinate the Shrimp: In a medium bowl, toss the shrimp with olive oil, chili powder, salt, and black pepper. Let the mixture sit for 10 minutes to absorb the flavors.
  2. Cook the Shrimp: Heat a skillet or grill pan over medium-high heat. Place the marinated shrimp in the skillet, cooking for 2–3 minutes on each side until they turn pink and develop a slight char. Once cooked, transfer them to a plate and set aside.
  3. Prepare the Mango Salsa: In a separate bowl, combine the diced mango, red onion, and jalapeño. Add the chopped cilantro, lime juice, and a sprinkle of salt, mixing gently to combine all the flavors.
  4. Mix Lime-Chili Sauce: In a small bowl, whisk together lime juice, olive oil, honey, chili powder, salt, and pepper until everything blends into a beautiful dressing.
  5. Slice the Avocados: Cut the avocados and drizzle them with a little lime juice to keep them vibrant and green.
  6. Assemble Your Bowls: Start with a base of rice or your choice of greens. Layer the cooked shrimp, creamy avocado, and vibrant mango salsa on top.
  7. Drizzle with Sauce: Finish with a generous drizzle of the lime-chili sauce, and garnish with extra cilantro for a pop of freshness.

Notes

Make the mango salsa and lime-chili sauce ahead of time for optimal flavor. Avoid overcooking the shrimp to maintain tenderness.
