- 1 lb shrimp, peeled and deveined
- 1 cup cooked rice
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or fresh
- 1 avocado, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, diced
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- Salt and pepper to taste
- 1/2 cup chipotle sauce
Instructions
- In a skillet, heat a little oil over medium heat and add the shrimp. Season with salt and pepper.
- Cook the shrimp for about 2-3 minutes on each side until they are pink and opaque.
- In a large bowl, combine the cooked rice, black beans, corn, avocado, cherry tomatoes, red onion, and cilantro.
- Drizzle lime juice over the mixture and toss gently to combine.
- Divide the rice mixture into bowls and top with the cooked shrimp.
- Drizzle chipotle sauce over the top and serve immediately.
