- 1 stick of butter (mostly melted)
- 4 cloves of garlic, minced
- 1/2 lemon for zest and 1 tablespoon of juice
- 1 tablespoon of Dijon mustard
- 1 teaspoon of paprika
- 1/2 teaspoon of cayenne or red pepper flakes
- 1/2 teaspoon of dried thyme
- 1 tablespoon of chives or green onions, sliced
- 2 tablespoons of fresh parsley, minced
- Salt and pepper, adjusted to taste
- Optional: rosemary sprig and smashed garlic for enhanced flavor during cooking
Instructions
- Let your steak sit at room temperature for about 30 minutes. This ensures even cooking throughout. While it rests, pat it dry with paper towels.
- Generously season your steak with salt, pepper, and minced garlic.
- Preheat your cast iron skillet over high heat until it’s smoking hot.
- Add a splash of avocado oil to the skillet, then place your steak in the pan, listening for that joyful sizzle.
- After a few minutes, flip your steak using tongs. Add in the European butter, more minced garlic, and a sprig of herbs (if using).
- Aim for a temperature of 130°F (medium-rare) using the meat thermometer.
- Once done, remove the steak, allowing it to rest for at least 5 minutes.
- Meanwhile, mix your softened butter with parsley, green onions, Dijon mustard, lemon zest, juice, and spices until smooth and creamy.
- Slice the steak against the grain and top it with a generous dollop of cowboy butter.
