Description

Delight in a tender steak topped with creamy, herb-infused cowboy butter for an unforgettable dining experience.


Ingredients

  • 1 stick of butter (mostly melted)
  • 4 cloves of garlic, minced
  • 1/2 lemon for zest and 1 tablespoon of juice
  • 1 tablespoon of Dijon mustard
  • 1 teaspoon of paprika
  • 1/2 teaspoon of cayenne or red pepper flakes
  • 1/2 teaspoon of dried thyme
  • 1 tablespoon of chives or green onions, sliced
  • 2 tablespoons of fresh parsley, minced
  • Salt and pepper, adjusted to taste
  • Optional: rosemary sprig and smashed garlic for enhanced flavor during cooking

Instructions

  1. Let your steak sit at room temperature for about 30 minutes. This ensures even cooking throughout. While it rests, pat it dry with paper towels.
  2. Generously season your steak with salt, pepper, and minced garlic.
  3. Preheat your cast iron skillet over high heat until it’s smoking hot.
  4. Add a splash of avocado oil to the skillet, then place your steak in the pan, listening for that joyful sizzle.
  5. After a few minutes, flip your steak using tongs. Add in the European butter, more minced garlic, and a sprig of herbs (if using).
  6. Aim for a temperature of 130°F (medium-rare) using the meat thermometer.
  7. Once done, remove the steak, allowing it to rest for at least 5 minutes.
  8. Meanwhile, mix your softened butter with parsley, green onions, Dijon mustard, lemon zest, juice, and spices until smooth and creamy.
  9. Slice the steak against the grain and top it with a generous dollop of cowboy butter.

Notes

Make ahead by preparing the cowboy butter a day in advance. Store leftovers in an airtight container for up to 3 days.
