Ingredients

  • 4 lamb shanks
  • 2 tablespoons olive oil
  • 1 onion, chopped

  • 1 cup red wine
  • 2 cups beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Season the lamb shanks with salt and pepper, then brown them in the skillet on all sides.
  3. Remove the shanks and set aside. In the same skillet, add onion, carrots, and garlic, sautéing until softened.
  4. Pour in the red wine, scraping up any browned bits from the bottom of the skillet.
  5. Add the beef broth, tomato paste, rosemary, and thyme, stirring to combine.
  6. Place the lamb shanks in the slow cooker and pour the vegetable and broth mixture over them.
  7. Cover and cook on low for 6-8 hours or until the lamb is tender and falling off the bone.
  8. Serve hot with your choice of sides.
