- 4 lamb shanks
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, chopped

- 2 cups beef broth

- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium-high heat.
- Season the lamb shanks with salt and pepper, then brown them in the skillet on all sides.
- Remove the shanks and set aside. In the same skillet, add onion, carrots, and garlic, sautéing until softened.
- Pour in the red wine, scraping up any browned bits from the bottom of the skillet.
- Add the beef broth, tomato paste, rosemary, and thyme, stirring to combine.
- Place the lamb shanks in the slow cooker and pour the vegetable and broth mixture over them.
- Cover and cook on low for 6-8 hours or until the lamb is tender and falling off the bone.
- Serve hot with your choice of sides.
