Description

Delicious small batch muffins combining the flavors of apple and pumpkin, topped with a crunchy streusel.


Ingredients

  • 1/2 cup all-purpose flour
  • 1/4 cup pumpkin puree
  • 1/4 cup apple, diced
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 cup milk
  • 1/4 cup vegetable oil
  • 1 egg
  • 1/4 cup oats (for streusel)
  • 1/4 cup chopped nuts (for streusel)
  • 1 tbsp butter (for streusel)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, combine the flour, baking powder, baking soda, cinnamon, nutmeg, and sugars.
  3. In another bowl, whisk together the pumpkin puree, milk, vegetable oil, and egg.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fold in the diced apple.
  6. In a small bowl, mix oats, chopped nuts, and melted butter to create the streusel topping.
  7. Divide the muffin batter evenly among the muffin cups and sprinkle the streusel on top.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Let cool for a few minutes before serving.

Notes

  • These muffins are best enjoyed fresh but can be stored in an airtight container for up to 3 days.
  • Feel free to substitute the apple with other fruits like pears or berries.
  • For a vegan option, replace the egg with a flax egg and use plant-based milk.
