Description

A delightful combination of tender baby potatoes, hot smoked salmon, and vibrant herbs, this Smoked Salmon Potato Salad is the perfect comfort food for any occasion.


Ingredients

  • 1 ½ lbs baby or fingerling potatoes
  • 6 to 7 large organic eggs
  • 1 lb hot smoked salmon
  • ½ cup salmon roe
  • 1 tbsp fresh chopped dill
  • 1 tbsp fresh chopped chives
  • ¼ cup freshly squeezed lemon juice (strained)
  • ¼ cup extra virgin olive oil
  • 1 tsp salt
  • ¼ tsp ground black pepper
  • 1 small shallot (finely diced)
  • 1 tbsp capers (chopped)

Instructions

  1. Prepare the Potatoes: Wash the baby or fingerling potatoes under cold water to remove any dirt. You can leave the skins on.
  2. Boil Them: Place the potatoes in a large pot filled with salted water. Bring to a rolling boil, then reduce to a simmer. Cook for about 15-20 minutes until fork-tender.
  3. Cool Down: Drain the potatoes in a colander and allow them to cool completely.
  4. Boil Water: While the potatoes are cooking, bring another pot of water to a boil. Reduce heat to a simmer.
  5. Cook the Eggs: Gently add the eggs to the simmering water and set a timer for 7 minutes.
  6. Ice Bath: Immediately transfer the eggs to an ice bath to stop the cooking process. Once cool, peel and chop them into quarters.
  7. Whisk it Up: In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  8. Combine Ingredients: In a large serving bowl, gently combine the cooled potatoes, chopped eggs, diced shallots, salmon, capers, dill, and chives.
  9. Add Dressing: Drizzle the dressing over the mixture and gently toss together.
  10. Plate it Up: Top your salad with salmon roe and a sprinkle of fresh herbs.

Notes

Make the salad a day in advance for enhanced flavor. Store any salmon roe separately until serving for freshness.
