Description

A luxurious yet comforting dish featuring succulent shrimp and pasta enveloped in a creamy garlic butter sauce with a hint of smoky paprika.

Ingredients

Scale
  • 1/2 lb pasta (angel hair, fettuccine, or penne)
  • 3 tbsp butter
  • 2 tbsp avocado oil
  • 8 to 10 garlic cloves (finely minced)
  • 2 lb jumbo shrimp (peeled and cleaned)
  • 1 tsp salt
  • Ground black pepper
  • 1 tsp smoked paprika
  • 1/3 cup white wine (or seafood broth)
  • 1 lemon (for juice)
  • 2 to 3 tbsp parsley (finely chopped)
  • Extra lemon (for serving)

Instructions

  1. Prepare the Pasta: Start by bringing a large pot of salted water to a rolling boil. Add your chosen pasta and cook according to the package instructions until al dente. Drain the pasta, saving a splash of the cooking water, then keep it warm.
  2. Sauté the Garlic: In a large frying pan over medium heat, combine the butter and avocado oil. Allow the butter to melt completely. Add the minced garlic, letting it sizzle for about a minute until fragrant.
  3. Add the Shrimp: Introduce the cleaned and peeled shrimp to the pan, tossing them with the aromatic garlic butter. Cook for about 2-3 minutes, stirring occasionally, until the shrimp turn pink.
  4. Incorporate Liquid Ingredients: Pour in the white wine or seafood broth, then squeeze in the juice of one lemon. Season with salt, pepper, and smoked paprika, stirring gently to combine.
  5. Finish Cooking: Allow the shrimp to cook for an additional 2-3 minutes or until they are completely opaque and firm to the touch.
  6. Toss with Pasta: Remove the pan from heat, and sprinkle in the chopped parsley. Add the warm pasta to the skillet and use tongs to toss everything together.
  7. Serve It Up: Plate your gorgeous scampi, adding extra lemon wedges on the side. Enjoy!

Notes

For make-ahead options, prepare the garlic butter sauce and shrimp ahead of time and reheat before adding freshly cooked pasta. Customize with vegetables like spinach or sun-dried tomatoes if desired.
