Description

A delicious and easy-to-make S’mores Ice Cream Sandwich Cake that combines the classic flavors of s’mores with creamy ice cream, perfect for summer gatherings.


Ingredients

  • 1 box of chocolate sandwich cookies
  • 1 quart of vanilla ice cream
  • 1 cup of mini marshmallows
  • 1 cup of chocolate chips
  • 1/2 cup of graham cracker crumbs
  • 1/4 cup of melted butter

Instructions

  1. Start by crushing the chocolate sandwich cookies into fine crumbs.
  2. In a bowl, mix the crushed cookies with melted butter and press the mixture into the bottom of a baking dish to form the crust.
  3. Spread a layer of vanilla ice cream over the cookie crust.
  4. Sprinkle mini marshmallows and chocolate chips over the ice cream layer.
  5. Add another layer of vanilla ice cream on top of the marshmallows and chocolate chips.
  6. Top with graham cracker crumbs and a few more mini marshmallows.
  7. Freeze the cake for at least 4 hours or until firm.
  8. Slice and serve, optionally toasting the marshmallows on top for extra flavor.

Notes

  • For a richer flavor, use chocolate ice cream instead of vanilla.
  • Make sure to let the cake sit at room temperature for a few minutes before slicing for easier serving.
  • This cake can be made a day in advance and stored in the freezer.
