Description
A delicious and easy-to-make S’mores Ice Cream Sandwich Cake that combines the classic flavors of s’mores with creamy ice cream, perfect for summer gatherings.

- 1 box of chocolate sandwich cookies
- 1 quart of vanilla ice cream
- 1 cup of mini marshmallows
- 1 cup of chocolate chips
- 1/2 cup of graham cracker crumbs
- 1/4 cup of melted butter
Instructions
- Start by crushing the chocolate sandwich cookies into fine crumbs.
- In a bowl, mix the crushed cookies with melted butter and press the mixture into the bottom of a baking dish to form the crust.
- Spread a layer of vanilla ice cream over the cookie crust.
- Sprinkle mini marshmallows and chocolate chips over the ice cream layer.
- Add another layer of vanilla ice cream on top of the marshmallows and chocolate chips.
- Top with graham cracker crumbs and a few more mini marshmallows.
- Freeze the cake for at least 4 hours or until firm.
- Slice and serve, optionally toasting the marshmallows on top for extra flavor.
Notes
- For a richer flavor, use chocolate ice cream instead of vanilla.
- Make sure to let the cake sit at room temperature for a few minutes before slicing for easier serving.
- This cake can be made a day in advance and stored in the freezer.
