- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 2 large eggs
- 1/4 cup melted butter
- 1/4 cup honey
- 1/2 cup butter (for honey butter)
- 1/4 cup honey (for honey butter)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, mix together cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, whisk together milk, eggs, and melted butter.
- Combine the wet and dry ingredients until just mixed.
- Grease a mini muffin tin and fill each cup with the batter.
- Bake for 15-20 minutes or until golden brown.
- While the poppers are baking, prepare the honey butter by mixing melted butter and honey together.
- Once the poppers are done, drizzle with honey butter before serving.
Notes
- For a sweeter taste, add more honey to the butter mixture.
- These poppers can be served warm or at room temperature.
- Store leftovers in an airtight container for up to 3 days.
