Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 large eggs
  • 1/4 cup melted butter
  • 1/4 cup honey
  • 1/2 cup butter (for honey butter)
  • 1/4 cup honey (for honey butter)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix together cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together milk, eggs, and melted butter.
  4. Combine the wet and dry ingredients until just mixed.
  5. Grease a mini muffin tin and fill each cup with the batter.
  6. Bake for 15-20 minutes or until golden brown.
  7. While the poppers are baking, prepare the honey butter by mixing melted butter and honey together.
  8. Once the poppers are done, drizzle with honey butter before serving.

Notes

  • For a sweeter taste, add more honey to the butter mixture.
