Description

A creamy Alfredo mixed with succulent chicken and vibrant Southwest spices, perfect for busy weeknights or special occasions.


Ingredients

  • 1/2 lb. Penne Pasta
  • 1 lb. Chicken Breasts (cut into 1″ strips)
  • 1 (15 oz.) can Diced Tomatoes
  • 1 cup Heavy Cream
  • 1 1/2 cups Cheddar Cheese (shredded)
  • 1 cup Onion (chopped)
  • 4 Garlic Cloves (minced)
  • 1 tbsp Honey
  • 1 tbsp Olive Oil
  • 1 tbsp Butter
  • 2 tbsp Cilantro (chopped)
  • 1 1/2 tsp Chili Powder
  • 1/2 tsp Cumin
  • 1/2 tsp Oregano
  • 1 tsp Paprika
  • 1/4 tsp Black Pepper
  • 1/2 tsp Salt
  • 1/8 tsp Cayenne

Instructions

  1. In a small bowl, mix together chili powder, cumin, oregano, paprika, black pepper, salt, and cayenne.
  2. Marinate the chicken with honey and half of the southwest seasoning.
  3. Boil water in a large pot and cook the penne according to package instructions until al dente.
  4. In a skillet, heat olive oil and cook marinated chicken until golden brown, then set aside.
  5. Sauté chopped onions in the same skillet, then add minced garlic.
  6. Add diced tomatoes and remaining seasoning to the skillet and simmer.
  7. Pour in the heavy cream and stir until combined, letting it thicken.
  8. Add chicken, cheddar cheese, and pasta to the skillet, mixing well.
  9. Garnish with chopped cilantro before serving.

Notes

Feel free to customize with vegetables or different proteins. Make-ahead tips include marinating the chicken ahead of time for quicker preparation.
