Description

A vibrant Southwest Chicken Wrap bursting with flavorful grilled chicken, fresh vegetables, and zesty dressing, perfect for a nutritious lunch or dinner.


Ingredients

  • 2 Chicken Breasts
  • 1 Red Bell Pepper, thinly sliced
  • 1 Yellow Bell Pepper, thinly sliced
  • 1 Red Onion, thinly sliced
  • 2 cups Spinach or Romaine Lettuce
  • 1 Avocado, sliced
  • 4 Tortillas (flour or whole wheat)
  • 1/2 cup Southwest Dressing
  • 2 tablespoons Olive Oil
  • Juice of 1 Lime
  • 2 cloves Garlic, minced
  • 1 teaspoon Cumin
  • 1/2 teaspoon Chili Powder
  • Salt and Pepper to taste

Instructions

  1. Marinate the chicken: In a bowl, mix olive oil, lime juice, garlic, cumin, chili powder, salt, and pepper. Coat the chicken and marinate for at least 30 minutes.
  2. Preheat the grill over medium-high heat and lightly oil it.
  3. Grill the chicken for 6-7 minutes on each side until cooked through with grill marks. Let rest before slicing.
  4. Prepare the vegetables by slicing bell peppers and red onion. Toss with olive oil, salt, and pepper.
  5. Assemble the wrap: Lay down spinach or lettuce, add sliced chicken, vegetables, avocado, and dressing on a tortilla.
  6. Wrap it up tightly and slice in half to serve.
