- 2 Chicken Breasts
- 1 Red Bell Pepper, thinly sliced
- 1 Yellow Bell Pepper, thinly sliced
- 1 Red Onion, thinly sliced
- 2 cups Spinach or Romaine Lettuce
- 1 Avocado, sliced
- 4 Tortillas (flour or whole wheat)
- 1/2 cup Southwest Dressing
- 2 tablespoons Olive Oil
- Juice of 1 Lime
- 2 cloves Garlic, minced
- 1 teaspoon Cumin
- 1/2 teaspoon Chili Powder
- Salt and Pepper to taste
Instructions
- Marinate the chicken: In a bowl, mix olive oil, lime juice, garlic, cumin, chili powder, salt, and pepper. Coat the chicken and marinate for at least 30 minutes.
- Preheat the grill over medium-high heat and lightly oil it.
- Grill the chicken for 6-7 minutes on each side until cooked through with grill marks. Let rest before slicing.
- Prepare the vegetables by slicing bell peppers and red onion. Toss with olive oil, salt, and pepper.
- Assemble the wrap: Lay down spinach or lettuce, add sliced chicken, vegetables, avocado, and dressing on a tortilla.
- Wrap it up tightly and slice in half to serve.
