Description
Delicious Southwest Eggrolls filled with a mix of vegetables and spices, served with a refreshing cilantro lime dip.

- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup bell peppers, diced
- 1 cup spinach, chopped
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 package eggroll wrappers
- Oil for frying
Instructions
- In a large bowl, combine black beans, corn, bell peppers, spinach, cumin, chili powder, garlic powder, and onion powder.
- Lay an eggroll wrapper on a clean surface and place 2 tablespoons of the filling in the center.
- Fold the sides of the wrapper over the filling and roll tightly to seal.
- Heat oil in a deep pan over medium heat.
- Fry the eggrolls in batches until golden brown and crispy, about 3-4 minutes per side.
- Remove from oil and drain on paper towels.
- For the cilantro lime dip, blend together 1/2 cup sour cream, 1/4 cup mayonnaise, juice of 1 lime, and 1/4 cup fresh cilantro until smooth.
- Serve the eggrolls hot with the cilantro lime dip.
Notes
- For a healthier option, bake the eggrolls at 400°F for 20-25 minutes instead of frying.
- Feel free to customize the filling with your favorite vegetables or proteins.
- These eggrolls can be made ahead of time and frozen before frying.
