Description

Ingredients

  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup bell peppers, diced
  • 1 cup spinach, chopped
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 package eggroll wrappers
  • Oil for frying

Instructions

  1. In a large bowl, combine black beans, corn, bell peppers, spinach, cumin, chili powder, garlic powder, and onion powder.
  2. Lay an eggroll wrapper on a clean surface and place 2 tablespoons of the filling in the center.
  3. Fold the sides of the wrapper over the filling and roll tightly to seal.
  4. Heat oil in a deep pan over medium heat.
  5. Fry the eggrolls in batches until golden brown and crispy, about 3-4 minutes per side.
  6. Remove from oil and drain on paper towels.
  7. For the cilantro lime dip, blend together 1/2 cup sour cream, 1/4 cup mayonnaise, juice of 1 lime, and 1/4 cup fresh cilantro until smooth.
  8. Serve the eggrolls hot with the cilantro lime dip.
