- 2 pieces of chicken breast (or tofu/tempeh)
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 tablespoon sesame oil
- 3 tablespoons chopped garlic
- 2–3 tablespoons chili paste
- 2 tablespoons soy sauce
- 4 cups chicken broth (or vegetable broth)
- 2 cups ramen noodles (Udon or Soba alternative)
- 2 green onions (for garnish)
- 2 soft-boiled eggs (optional)
Instructions
- Prepare the broth by heating sesame oil in a large pot over medium heat and adding chopped garlic.
- Sear the chicken, seasoned with salt and pepper, in the pot for 4-5 minutes.
- Build the broth by stirring in chili paste and soy sauce, then adding chicken broth and simmering for 15 minutes.
- Cook the ramen noodles in a separate pot according to package instructions, then drain.
- Combine the sliced chicken back into the pot, ladle the broth over noodles, and garnish with green onions and eggs.

Notes
Store leftovers separately in the fridge for up to three days or freeze the broth for up to three months.
