Ingredients

  • 1 can coconut milk
  • 1 cup water

Instructions

  1. Preheat your Grill or Oven to medium-high heat.
  2. Mix the marinade: whisk together maple syrup, soy sauce, and sriracha.
  3. Marinate the chicken thighs with the marinade, letting them soak for at least 30 minutes.
  4. Prepare the coconut rice by combining coconut milk and water in a pot. Bring to a gentle simmer, add rice, and cook per package instructions.
  5. Cook the marinated chicken thighs for 6-8 minutes on each side, ensuring they reach an internal temperature of 165°F.
  6. Serve the chicken thighs atop a scoop of coconut rice and garnish with fresh cilantro.

Notes
