  • 3 cloves garlic (minced)

  • 1 teaspoon chili flakes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1.5 lbs baby potatoes (halved)
  • 2 tablespoons olive oil
  • 1/2 cup feta cheese (block feta, not pre-crumbled)
  • 1/4 cup fresh dill (chopped)
  • 1/3 cup sour cream or Greek yogurt (for the sauce)
  • 1 tablespoon lemon juice (for the sauce)
  • 1 tablespoon water or olive oil (for blending, adjust as needed)

Instructions

  1. Prepare the Marinade: In a large mixing bowl, whisk together the Greek yogurt, minced garlic, lemon juice, paprika, chili flakes, salt, and black pepper until well combined.
  2. Marinate the Chicken: Add the chicken thighs, massaging the marinade into every piece, cover with plastic wrap, and refrigerate for at least 1 hour, preferably overnight.
  3. Preheat the Oven: Preheat your oven to 425°F (220°C).
  4. Prepare the Baby Potatoes: Toss halved baby potatoes with olive oil, salt, and pepper on a rimmed baking sheet. Place cut-side down and roast for 30-35 minutes, flipping halfway.
  5. Sear the Chicken: Heat a cast iron skillet over medium-high heat and sear chicken for 5-7 minutes per side until charred and reaches an internal temperature of 165°F.
  6. Prepare the Dill Feta Cream: In a blender, combine feta cheese, fresh dill, sour cream, lemon juice, and water or olive oil, blending until smooth.
  7. Serve: Plate the seared chicken with crispy potatoes, drizzling the dill feta cream over the top. Enjoy!

Marinate chicken overnight for the best flavor. Halving the baby potatoes ensures even cooking.
