Ingredients

  • 12 large mushrooms
  • 1 cup fresh spinach, chopped
  • 1 cup artichoke hearts, chopped
  • 1/2 cup cream cheese, softened
  • 1/4 cup sour cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Clean the mushrooms and remove the stems.
  3. In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
  4. Add chopped spinach and artichoke hearts, cooking until spinach is wilted.
  5. In a bowl, mix cream cheese, sour cream, Parmesan, mozzarella, and the sautéed mixture. Season with salt and pepper.
  6. Stuff each mushroom cap with the spinach artichoke mixture.
  7. Place stuffed mushrooms on a baking sheet and bake for 20-25 minutes until golden and bubbly.
  8. Serve warm and enjoy!

  • For a spicier kick, add red pepper flakes to the filling.
