- 2 tablespoons fresh cilantro, chopped
- 1 jalapeño, sliced
- 1 tablespoon sour cream
- ½ cup diced tomatoes
Instructions
- In a medium saucepan, combine beef broth, butter, salt, garlic powder, and smoked paprika. Bring to a boil, stir in rice, cover, and simmer for 15-18 minutes. Fluff with a fork and set aside.
- Toss steak strips with salt, black pepper, garlic powder, paprika, and cumin. Heat olive oil in a skillet over medium-high heat. Add steak and cook for 3-4 minutes per side until browned. Remove and let rest for 5 minutes.
- In a small saucepan, heat heavy cream over low heat. Add cream cheese and stir until melted. Gradually mix in cheddar and Monterey Jack, stirring until creamy. Add garlic powder and cayenne if desired.
- Divide cooked rice into bowls, lay steak over rice, and drizzle with queso sauce.
- Garnish with cilantro, diced tomatoes, jalapeño slices, and a dollop of sour cream. Serve immediately.
