Ingredients

- 2 pounds of potatoes, diced
- 1 cup of sour cream
- 1/2 cup of mayonnaise
- 1 cup of cooked bacon, crumbled
- 1 cup of shredded cheddar cheese
- 1/2 cup of green onions, chopped
- 1 tablespoon of Dijon mustard
- Salt and pepper to taste
Instructions
- Boil the diced potatoes in salted water until tender, about 15-20 minutes.
- Drain the potatoes and let them cool slightly.
- In a large bowl, mix together the sour cream, mayonnaise, Dijon mustard, salt, and pepper.
- Add the cooled potatoes to the bowl and gently fold to combine.
- Stir in the crumbled bacon, shredded cheddar cheese, and chopped green onions.
- Chill in the refrigerator for at least 1 hour before serving.
Notes
- For a healthier version, you can use Greek yogurt instead of sour cream.
