Description
Sticky Toffee Pudding is a rich and moist dessert made with finely chopped dates, covered in a luscious toffee sauce, and often served with vanilla ice cream or custard.

- 200g pitted dates, chopped
- 250ml boiling water
- 1 tsp baking soda
- 100g unsalted butter, softened
- 150g brown sugar
- 2 large eggs
- 200g all-purpose flour
- 1 tsp vanilla extract
- 1 tsp baking powder
- For the toffee sauce: 200g brown sugar, 100g unsalted butter, 250ml double cream
Instructions
- Preheat the oven to 180°C (350°F) and grease a baking dish.
- In a bowl, combine the chopped dates and boiling water, then stir in the baking soda and let it sit.
- In another bowl, cream together the butter and brown sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the date mixture, followed by the flour, vanilla extract, and baking powder until just combined.
- Pour the batter into the prepared baking dish and bake for 30-35 minutes or until a skewer comes out clean.
- While the pudding is baking, prepare the toffee sauce by melting the butter and brown sugar in a saucepan, then stir in the double cream and simmer for a few minutes.
- Once the pudding is done, let it cool slightly before pouring half of the toffee sauce over it.
- Serve warm with the remaining toffee sauce and optional ice cream or custard.
Notes
- For a richer flavor, let the pudding sit for a few hours or overnight before serving.
- This dessert can be made ahead of time and reheated before serving.
