Description

A delightful fusion of fruity sweetness and savory chicken cooked in a luscious strawberry sauce, perfect for summer dining.


Ingredients

Scale
  • 1 tablespoon olive oil
  • 2 boneless, skinless chicken breasts
  • ½ teaspoon sea salt
  • ¼ cup strawberry jam
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon water
  • ¼ cup fresh basil leaves
  • 2 tablespoons crumbled goat cheese (optional)
  • ¼ cup fresh strawberries (sliced, optional)

Instructions

  1. Heat the olive oil in a medium skillet over medium-high heat.
  2. Season the chicken breasts with sea salt on both sides and add them to the skillet.
  3. Sear for about 4-5 minutes on one side until golden.
  4. Flip the chicken and cook for another 4-5 minutes until cooked through.
  5. Prepare the sauce by whisking together the strawberry jam, balsamic vinegar, and water.
  6. Pour the sauce over the chicken and let it simmer for 2-3 minutes.
  7. Remove the chicken from the skillet and place on a serving platter.
  8. Top with goat cheese, garnish with basil and strawberries.

Notes

You can make the sauce a day in advance. Use an air fryer or oven for cooking alternatives.
