- 2 cups cooked chicken, shredded
- 1 can (15 oz) corn, drained
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 1 cup chicken broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup cilantro, chopped
- 1 lime, juiced
Instructions
- In a large pot, sauté the onion and garlic until translucent.
- Add the shredded chicken, corn, black beans, diced tomatoes, and chicken broth.
- Stir in the chili powder, cumin, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Stir in the cilantro and lime juice just before serving.
