- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 cup crumbled Cotija cheese
- 1 tablespoon chili powder
- 1 lime, juiced
- Salt to taste
Instructions
- Preheat the grill to medium-high heat.
- Grill the corn for about 10-15 minutes, turning occasionally until charred.
- In a bowl, mix together mayonnaise, sour cream, lime juice, and salt.
- Once the corn is grilled, remove it from the grill and brush the mayonnaise mixture all over the corn.
- Sprinkle the crumbled Cotija cheese and chili powder over the corn.
- Serve immediately with lime wedges on the side.
Notes
- For a spicier version, add more chili powder or a dash of hot sauce.
- Can substitute Cotija cheese with feta cheese if unavailable.
- For a vegan version, use vegan mayonnaise and omit the cheese or use a vegan cheese alternative.
