Ingredients

  • 4 large bell peppers
  • 1 pound ground turkey
  • 1 cup cooked rice
  • 1 can diced tomatoes (14.5 oz)

  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, sauté the onion and garlic until translucent.
  4. Add the ground turkey and cook until browned.
  5. Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper.
  6. Stuff the mixture into the bell peppers.
  7. Place the stuffed peppers in a baking dish and cover with foil.
  8. Bake for 30 minutes, then remove the foil and sprinkle cheese on top if desired.
  9. Bake for an additional 10-15 minutes until the peppers are tender and the cheese is melted.

Notes

  • Feel free to add other vegetables to the stuffing mixture.
  • These can be made ahead of time and stored in the refrigerator before baking.
  • For a spicier version, add diced jalapeños to the filling.
