Description

Ingredients

  • 1 whole chicken (about 45 lbs)
  • 2 cups of bread crumbs
  • 1 cup of cooked spinach
  • 1/2 cup of grated Parmesan cheese
  • 1/4 cup of chopped fresh herbs (parsley, thyme, rosemary)
  • 2 cloves of garlic, minced
  • 1/2 cup of chicken broth
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix together the bread crumbs, cooked spinach, Parmesan cheese, herbs, garlic, chicken broth, salt, and pepper.
  3. Stuff the mixture into the cavity of the whole chicken.
  4. Place the chicken in a roasting pan and drizzle with olive oil.
  5. Roast in the preheated oven for about 1.5 hours, or until the internal temperature reaches 165°F (75°C).
