Instructions
- Preheat the oven to 325°F (165°C).
- In a large oven-safe pot, heat the vegetable oil over medium heat.
- Season the beef roast with salt, pepper, and paprika, then sear it in the pot until browned on all sides.
- Add the sliced onions and minced garlic to the pot, cooking until the onions are translucent.
- Pour in the beef broth and add the bay leaf.
- Cover the pot and transfer it to the preheated oven.
- Roast for about 2 to 3 hours, or until the beef is tender.
- Remove from the oven, let it rest for a few minutes, then slice and serve garnished with fresh parsley.
