- 4 salmon fillets
- 1 mango, diced
- 1/2 red onion, finely chopped
- 1/2 red bell pepper, diced
- 1 jalapeño, seeded and minced
- 1 lime, juiced
- 2 tablespoons cilantro, chopped
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat the grill or stovetop pan over medium-high heat.
- Season the salmon fillets with salt and pepper, then brush with olive oil.
- Grill the salmon for about 4-5 minutes on each side until cooked through.
- In a mixing bowl, combine diced mango, red onion, red bell pepper, jalapeño, lime juice, and cilantro to make the salsa.
- Top the grilled salmon with the mango salsa and serve immediately.
Notes
Make the mango salsa ahead of time for better flavor blending. Don’t overcook the salmon for the best texture.
