Description

A vibrant and flavorful dish of chicken marinated in yogurt and spices, then broiled to perfection for a smoky char.


Ingredients

  • 1.5 pounds boneless skinless chicken thighs
  • 1 lime (juiced)
  • 3/4 teaspoon table salt
  • 3/4 teaspoon ground black pepper
  • 1 (7-ounce) container plain Greek yogurt
  • 5 cloves garlic (minced)
  • 1 tablespoon minced fresh ginger
  • 1 tablespoon ground cumin
  • 1 tablespoon smoked paprika
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cayenne

Instructions

  1. Marinate Chicken: Rub chicken with salt, pepper, and lime juice. In a bowl, mix Greek yogurt, garlic, ginger, cumin, paprika, turmeric, and cayenne. Coat chicken in marinade, cover, and refrigerate for at least 6 hours or up to 24 hours.
  2. Prepare: Preheat broiler or oven to 450°F (232°C). Line a baking sheet with foil or parchment. Arrange marinated chicken on the sheet.
  3. Cook Chicken: Broil for 15-20 minutes until edges are charred. Flip and cook for an additional 10 minutes. Ensure chicken reaches 165°F (74°C) internally.

Notes

Marinate the chicken a day in advance for deeper flavors. Adjust spices to your heat preference. For air frying, cook at 375°F for about 20-25 minutes.
