Ingredients

  • 34 lbs beef brisket
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 2 teaspoons dried thyme
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 1 bay leaf

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. In a large Dutch oven, heat olive oil over medium-high heat.
  3. Season the brisket with salt and pepper, then sear it in the hot oil until browned on both sides.
  4. Remove the brisket and set aside. In the same pot, add onions and garlic, sautéing until softened.
  5. Add the beef broth, red wine, tomato paste, thyme, carrots, celery, and bay leaf to the pot.
  6. Return the brisket to the pot, cover, and transfer to the oven.
  7. Braise for 3-4 hours, or until the meat is tender.
  8. Remove from the oven, let rest for 15 minutes, then slice and serve.
