- 8 oz Pasta (penne or rotini)
- 1 lb Ground Beef
- 1 can Diced Tomatoes
- 1 can Diced Green Chiles
- 2 cups Shredded Cheese (Cheddar and Monterey Jack)
- 1 Onion, diced
- 2 cloves Garlic, minced
- 1 tsp Chili Powder
- 1 tsp Cumin
- Salt and Pepper to taste
- 1 tbsp Olive Oil
Instructions
- Warm the olive oil in a large pot or Dutch oven over medium heat until shimmering.
- Sauté the diced onion and minced garlic until the onion turns translucent.
- Brown the ground beef, breaking it apart until fully cooked.
- Add chili powder, cumin, and season with salt and pepper.
- Incorporate the diced tomatoes and green chiles into the mixture.
- Mix in the pasta and enough water to cover it.
- Bring to a boil, then lower the heat and simmer uncovered until the pasta is al dente.
- Melt in the cheese until it becomes a gooey sauce.
- Serve hot, garnished with fresh cilantro or sour cream.
Notes
For best flavor, let cool and refrigerate overnight; it can be reheated easily. You can also add more veggies like bell peppers or corn for added nutrition.
