Description

A hearty and comforting Tex Mex Pasta dish that combines savory ground beef, zesty tomatoes, and melted cheese for a flavorful family meal.


Ingredients

  • 8 oz Pasta (penne or rotini)
  • 1 lb Ground Beef
  • 1 can Diced Tomatoes
  • 1 can Diced Green Chiles
  • 2 cups Shredded Cheese (Cheddar and Monterey Jack)
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 1 tsp Chili Powder
  • 1 tsp Cumin
  • Salt and Pepper to taste
  • 1 tbsp Olive Oil

Instructions

  1. Warm the olive oil in a large pot or Dutch oven over medium heat until shimmering.
  2. Sauté the diced onion and minced garlic until the onion turns translucent.
  3. Brown the ground beef, breaking it apart until fully cooked.
  4. Add chili powder, cumin, and season with salt and pepper.
  5. Incorporate the diced tomatoes and green chiles into the mixture.
  6. Mix in the pasta and enough water to cover it.
  7. Bring to a boil, then lower the heat and simmer uncovered until the pasta is al dente.
  8. Melt in the cheese until it becomes a gooey sauce.
  9. Serve hot, garnished with fresh cilantro or sour cream.

Notes

For best flavor, let cool and refrigerate overnight; it can be reheated easily. You can also add more veggies like bell peppers or corn for added nutrition.
