  • 1 packet taco seasoning
  • 1 cup shredded cheese
  • 1 cup cornmeal
  • 1 cup milk
  • 2 eggs
  • 1 tsp baking powder
  • 1 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the ground beef and onion over medium heat until the beef is browned.
  3. Add the black beans, corn, diced tomatoes, and taco seasoning to the skillet. Stir to combine and cook for 5 minutes.
  4. In a separate bowl, mix the cornmeal, milk, eggs, baking powder, and salt until smooth.
  5. Spread the beef mixture evenly in a greased pie dish.
  6. Pour the cornmeal mixture over the beef mixture and spread it evenly.
  7. Sprinkle shredded cheese on top.
  8. Bake in the preheated oven for 30-35 minutes or until the top is golden brown.
  9. Let it cool for a few minutes before serving.
