- 1 lb ground beef
- 1 onion, chopped
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 packet taco seasoning
- 1 cup shredded cheese
- 1 cup cornmeal
- 1 cup milk
- 2 eggs
- 1 tsp baking powder
- 1 tsp salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, cook the ground beef and onion over medium heat until the beef is browned.
- Add the black beans, corn, diced tomatoes, and taco seasoning to the skillet. Stir to combine and cook for 5 minutes.
- In a separate bowl, mix the cornmeal, milk, eggs, baking powder, and salt until smooth.
- Spread the beef mixture evenly in a greased pie dish.
- Pour the cornmeal mixture over the beef mixture and spread it evenly.
- Sprinkle shredded cheese on top.
- Bake in the preheated oven for 30-35 minutes or until the top is golden brown.
- Let it cool for a few minutes before serving.
