Description

Delightful wraps bursting with flavor, crunch, and warmth, featuring seasoned ground chicken in fresh lettuce leaves.


Ingredients

  • 1 Tablespoon sesame oil
  • ¼ cup onion (diced; yellow or white onion)
  • 2 cloves of garlic (minced)
  • 1 tablespoon fresh minced ginger
  • 10 oz ground chicken
  • ¼ cup Tamari (low sodium) or soy sauce/coconut aminos
  • 2 Tablespoon Thai sweet red chili sauce
  • Juice of 1 lime
  • 1 teaspoon maple syrup (or honey/agave)
  • ⅓ cup cashews (chopped)
  • ¼ cup scallions (chopped)
  • ¼ cup cilantro (fresh)
  • ¼½ cup carrots (shredded)
  • Sesame seeds for topping
  • 1 head of butter lettuce (leaves rinsed and dried)

Instructions

  1. Heat your skillet over medium-high heat and add the sesame oil. Toss in the diced onion and cook for 2–3 minutes until softened.
  2. Add the minced garlic and ginger, sautéing for another 2 minutes until fragrant.
  3. Introduce the ground chicken to the pan, breaking it up with a wooden spoon. Season with salt and pepper and let it brown for about 3–4 minutes.
  4. Mix together the tamari, chili sauce, lime juice, and maple syrup in a small bowl.
  5. Sprinkle chopped cashews over the cooked chicken, pour in the prepared sauce, and let it bubble for another 2 minutes.
  6. Add the shredded carrots, chopped scallions, and cilantro at the end, mixing well.
  7. Fill a lettuce leaf generously with the chicken mixture, topping with additional sauce and sesame seeds.

Notes

Feel free to use ground turkey or a plant-based protein for alternatives. For added flavor, toast the cashews briefly before mixing.
