A delicious and healthy Tofu Bowl topped with a creamy peanut sauce, perfect for a nutritious meal.
Ingredients

- 1 block of firm tofu, drained and pressed
- 2 tablespoons of soy sauce
- 1 tablespoon of olive oil
- 1 cup of cooked brown rice
- 1 cup of mixed vegetables (broccoli, bell peppers, carrots)
- 1/4 cup of peanut butter
- 2 tablespoons of honey or maple syrup
- 1 tablespoon of rice vinegar
- 1 tablespoon of sesame oil
- 1 clove of garlic, minced
- 1 teaspoon of ginger, grated
- Chopped peanuts and green onions for garnish
Instructions
- Start by pressing the tofu to remove excess moisture, then cut it into cubes.
- In a bowl, marinate the tofu cubes with soy sauce for about 15 minutes.
- Heat olive oil in a pan over medium heat and add the marinated tofu. Cook until golden brown on all sides.
- In another pot, steam or sauté the mixed vegetables until tender.
- In a small bowl, whisk together peanut butter, honey (or maple syrup), rice vinegar, sesame oil, garlic, and ginger to make the peanut sauce.
- To assemble the bowl, place cooked brown rice at the bottom, add the cooked tofu and vegetables on top.
- Drizzle the peanut sauce over the bowl and garnish with chopped peanuts and green onions.
- Serve warm and enjoy your healthy meal!
Notes
- For a spicier sauce, add a dash of sriracha or chili flakes.
- This recipe is easily customizable with your favorite vegetables.
- Leftover peanut sauce can be stored in the refrigerator for up to a week.
