A delicious Turkey Pesto Melt featuring sun-dried tomatoes, perfect for a quick and satisfying meal.
Ingredients

- 2 slices of whole grain bread
- 4 oz sliced turkey breast
- 2 tbsp pesto
- 1/4 cup sun-dried tomatoes, chopped
- 1/2 cup mozzarella cheese, shredded
- 1 tbsp olive oil
Instructions
- Preheat a skillet over medium heat.
- Spread pesto on one side of each slice of bread.
- Layer turkey, sun-dried tomatoes, and mozzarella cheese on one slice of bread.
- Top with the other slice of bread, pesto side down.
- Brush the outside of the sandwich with olive oil.
- Place the sandwich in the skillet and cook until golden brown, about 3-4 minutes per side.
- Remove from heat, slice, and serve warm.
Notes
- For extra flavor, add fresh basil leaves.
- Can substitute turkey with chicken or a plant-based alternative for a vegetarian option.
