Ingredients

  • 2 medium zucchinis, diced
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Heat the olive oil over medium heat in a large skillet, allowing it to shimmer.
  2. Sauté the onion and garlic, stirring for about 2-3 minutes until translucent and fragrant.
  3. Cook the ground turkey, breaking it apart as it cooks for about 5-7 minutes until golden-brown and fully cooked.
  4. Incorporate the diced zucchini and chopped bell pepper, cooking for an additional 5 minutes.
  5. Add the can of diced tomatoes, including juices, and sprinkle in the Italian seasoning, salt, and pepper. Stir well and simmer for about 10 minutes.
  6. Finish by sprinkling grated Parmesan on top and garnishing with fresh basil just before serving.
